Latinos has been the Italian-Spanish restaurant in the heart of Valkenburg for more than 25 years, and our Langosta doesn’t come from a freezer but from our own homarium — a chilled tank where the lobsters swim until you decide. What is a homarium, and why do we have one?

A homarium is a chilled saltwater tank that keeps live lobsters calm and healthy until they are cooked. It keeps the meat firm, sweet and crystal-clear in flavour. We chose one because the difference is huge: a lobster that swam hours ago tastes fuller than one that travelled for days.

How do we prepare the Langosta?

Simply, because good ingredients don’t ask for much. The lobster goes on the fire whole or halved, brushed generously with herb butter, and arrives on a little nest of samphire — saline, crisp, exactly what shellfish wants. Fresh garlic, sea salt and good olive oil: the honest base of our whole Mediterranean kitchen.

How do you order lobster at Latinos: whole or half?

The menu lists the Langosta whole (€50) or half (€30). Half is a generous main for one; whole is happily shared by two. Want a taste without a full one? Order our Zarzuëla — the authentic Spanish fish soup — with half a lobster in it for €40. See the full menu.

Does lobster fit an evening of tapas and pasta?

It does. Many guests start by sharing a few things — a Burrata, some Calamares, or our Conchitas a la Parmesan with scallops — then let the lobster arrive as a festive finish. Our kitchen is built around eating together, at your own pace. For a table with lobster we recommend booking ahead.
